banana pumpkin pancakes

Happy fall y'all! Are you ready for everything pumpkin and spice? I am but I want some more healthy options so I am going to do just that by sharing some fun recipes for fall that include better ingredients.

It's still hot in Texas y'all but this week we are finally getting some cooler weather. Some would call it a cold front since it will be in the 80s. HA! 

Banana Pumpkin Pancakes


servings: 24

10 eggs
1 cup almond flour
1 cup oatmeal
1 3/4 cup pumpkin purée
4 bananas 
2 tsp vanilla
4 tsp baking powder
1 tsp pumpkin spice 


1. Leaving out the bananas, add all wet ingredients into a blender.

2. Add oats and blend well. 

3. Combine the rest of the dry ingredients, blend well. 

4. Pulse bananas in or blend well if you want no sorts of chunks

5. I like using a griddle so I can make 8+ pancakes at a time and I set the temp to 325-350. 

6. Top with bananas and maple syrup. Sprinkle with pumpkin spice and top with bananas.
