Quinoa Avocado Lime Salad


This salad is perfect for the summer with it's fresh taste and the fact that it is so good cold. You just pop it out of the fridge and eat. You must try this and let me know how you love it. haha.





The Dressing



Quinoa Avocado Lime Salad 

Ingredients

Servings: 4 


  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup olive oil
  • 1/2 cup halved cherry tomatoes 
  • juice from 2 limes
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp red pepper flakes (skip this part if you are sharing with your littles)
  • 5 green onions chopped
  • 1/4 cup fresh cilantro
  • 1.5 avocados chopped
  • salt & pepper to taste
  • 2 pounds diced grilled chicken / ground beef / or ground turkey
Recipe

Bring quinoa to boil in saucepan.Reduce heat to med-low heat, cover & simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes usually Set aside to cool. 

Once cooled, slowly fold in cherry tomatoes, cilantro, avocado and diced chicken. Then your your dressing over mix. 


Dressing

Whisk olive oil, lime juice, cumin, salt, pepper and red pepper flakes.
