Real Food Coconut Cashew Bars

These started off as my husband's favorite and then he added almond butter to them. That's when they became my favorite! My husband has been making these for several months. I finally told him I had to have this recipe so I had to watch him because he said it was a Mexican measurements. Which is what my mom refers to as "a pinch of this, a handful of these and a sprinkle of that!" Ha! 

You'll need a food processor in order to really chop these ingredients up but a blender would work well if you presoak the dates in warm water for about 10 minutes before to soften them.

Real Food Coconut Cashew Bars


3/4 cup raw cashews
3/4 cup shredded coconut
2 cups dates
4 tbsp almond butter
1 tbsp pink salt or sea salt


Add cashews and blend. Add shredded coconut next then blend. Add your dates and blend. By this point you should have everything chopped but not anything close to a paste. Do not over blend the ingredients together. This is key. Then add in your almond butter to achieve a tacky texture.

Scrape everything out of the food processor and pour out onto a cutting board to form a compact ball. Once you have formed a ball, grab another cutting board and press down on the ball to form 1/2 inch thickness. Then cut into the size bars you'd like to enjoy. 

Sprinkle with salt.

We store ours in the refrigerator for up to 10 days.
