Fennel and Apple Soup

Tis’ the season for yummy, warm soups! 

Kicking the season off with this fennel and apple soup.

Fennel and Apple Soup


2 onions (chopped)
2 fennel bulbs (chopped) 
2 green apples (chopped)
1 quart chicken broth
2 tbsp coconut oil
2 tbsp dried thyme
2 tbsp pink Himalayan salt 
Optional: add cooked chicken breast squares 


Cook onions for 5 mins over medium heat with coconut oil. Add fennel and apples, cook 5-10 mins. Add chicken broth, thyme & pink salt. Cook 5-10 mins. Blend half soup in blender then combine back to soup. Enjoy! 🙂
