Homemade Trailmix

Tomorrow I start packing my daughters lunch for school sooo.. I needed something to put into her lunch box and also for me to snack on because #momfuel  so I whipped up this homemade trail mix!

Fennel and Apple Soup

Almond Butter Balls

Friday hangs including a few of these for the girls and I. 

almond butter balls

2/3 almond butter 
1/2 cup oats
2 tbsp coconut agave or honey 
1/4 cup coconut flakes 
1/4 cup pumpkin seeds 
1/4 sunflower seeds
1 tbsp chia seeds 
1 tbsp flax seeds 
Optional: chocolate chips

mix all together in a bowl and form small balls.

Cinnamon Almond Oat Balls

Cinnamon Almond Oat Balls

Since I’m currently not doing the Keto diet or Whole 30. I allow myself to have oats and I made all the variations tonight. ☺️🙌🏼 But here’s one:

1 1/4 cup oats
1/2 cup almond butter
1/2 cup chopped almonds 
1 tsp cinnamon
2 tbsp honey

1/4 cup coconut flakes
1 tbsp cinnamon 

In a bowl, mix all of the ingredients together well. Roll into balls. Mix the toppings together and roll the oat balls into the mixture. I like to put mine in the refrigerator and you can add an extra tsp of cinnamon if you like some spice 🌶

Roasted Brussel Sprouts with Cranberries and Walnuts

Oh my Brussel Sprouts - I love them so much! 


1 bag of Brussel Sprouts
1 bag of cranberries
1/2 cup walnuts
2-3 tbsp of rosemary 
2 tbsp pink salt

Toss in avocado oil 🤤 Pop in the oven at 400 for 35 mins. 
Flipping halfway through. Expect to be blown away by this goodness.

Homemade Mexican Chicken Soup

Homemade Mexican Chicken Soup aka Caldo de pallo ✨

1 whole organic chicken ~5lbs
12 carrots
2 zucchinis
1 head of cabbage
6 potatoes
12 cups of chicken broth
1/2 onion
2 bulbs of garlic
1 bunch of fresh cilantro
2 tbsp pink salt

Prep: Cut your whole chicken in half and then cut it 4 more times for each half. You may want to use napkins underneath because this is the messiest part. Breaking up the chicken helps it cook faster. The bones add flavor and health benefits so leave those in there. 

Peel and cut your carrots. Cube your potatoes and cabbage into fairly big pieces as you want them to stay in tact and not become part of the broth. Chop onions, cilantro and garlic. Cut your zuchinnis into 3 parts. 

Pour chicken broth, garlic, onions and pink salt into a large pot. Bring to boil and add your chicken pieces to the broth. Let cook for about 35-45 minutes. 

Once your chicken is cooked add potatoes and carrots. Once those are cooked add your softer veggies: cabbage, zucchinis and cilantro. Let simmer for 15 minutes. 

Serve hot! Pour lime juice all over for a punch of flavor and heat some tortillas up to eat on the side or dip into your soup. Perfect for colder weather and a sick remedy. Enjoy friends!

Egg Roll in a Bowl

Egg Roll in a Bowl 🥢

2lbs ground turkey
1 bag of coleslaw mix
1/2 chopped onion
2 tsp red boat fish sauce 
3 tbsp teriyaki sauce 
Salt & Pepper to taste

Cook onion. Add ground turkey after 3-4 mins. Pour 2 tbsp teriyaki sauce over meat and fish sauce. Cook throughly. In a separate pan add avocado oil and lightly cook coleslaw mix, add 1 tbsp teriyaki sauce. Combine ingredients! Enjoy 😀
