Homemade Pesto + a few uses

As social media does, I saw everyone posting about Trader Joe's pesto sauce, so I ran out to grab some and try it out. I was not a huge fan of the ingredients from the get-go but still wanted to try it. 

I ended up using it more in my daughters lunch than anything so of course I wanted to feel the absolute best sending her off to school with her healthy lunch that included healthy, homemade pesto sauce ;) I knew the base of pesto was Basil leaves so I picked those up and cashews are all the rave as a substitute for cheese. My husband and I are actually huge fans of Austin Texas' Picnik creamy queso (so so good!) and the base to that recipe is cashews. I have also made a queso-like dressing out of cashews before for one of my taco Tuesday posts ( check it out HERE ).

My favorite part about this whole process is this extremely cute mason jar I get to store my pesto sauce in. It's the little things. haha.

Homemade Pesto

2 cups fresh basil
1/2 cup cashews
1/4 pine nuts
1 whole lemon, juiced
3-4 tbsp avocado oil
1 tbsp sea salt
optional: 1 garlic clove

Other ways to use it: great spread on sandwiches, mixed in with pasta and chicken, and over a delicious grilled chicken breast. How do you like to use Pesto? Comment below.
