Roasted Fennel Recipe + health benefits

One of my favorite side dishes!

My girlfriend was telling me how she loved putting balsamic on her veggies and I thought to myself, I'm gonna try it! I decided to try it on Fennel. I love it! Such a good side and has a really unique taste. 

Roasted Fennel

Servings: 2 


2 bulbs of Fennel 
2 tbsp of balsamic vinegar
2 tbsp avocado oil or coconut oil or olive oil
Salt and Pepper to taste


Choose a fennel bulb that is firm and mostly white at the bottom. Any brown spots - avoid.  It is crunchy in texture and has a light licorice taste that pairs so well with the balsamic vinegar. The bulb will lose it's flavor so use within 4-5 days.

Wash and cut fennel into quarter slices. Grease small baking sheet and lay fennel down. Pour avocado oil and balsamic over. 

Bake on 400 for 30 minutes. 

*I like to splash a little more balsamic on top to finish it off and a sprinkle of sea salt!
