Ground Beef Sweet Pots Bowl

Back when my husband and I lived in Dallas there was this spot called HG supply co. that had these bomb bowls. It's still up for debate whether or not I cared for the dish at first but whatever. My husband and I went back home and created the dish he ordered and have been making it ever since! 

Super filling and the eggs on top pack so much flavor once the yokes spill open over the dish! We love mixing everything in the bowl once we get it, but hey, A+ for presentation here. haha


Servings: 4-5

2lbs ground beef
4 large sweet potatoes or 6 smaller ones (chopped)
2 cloves of garlic (minced)
2 easy medium eggs per bowl
2 avocados
Salt and pepper


Set oven to 400. Roast sweet potatoes for 25 minutes.

Cook garlic in a large pan 3-4 minutes. Add the ground beef, season with salt and pepper. 

In a separate pan, set to low and cook 2 eggs over medium for each bowl. 

Make your bowl - first lay your sweet potatoes down, followed by ground beef, 2 eggs and your sliced avocado. 

You can pour hot sauce all over it for some spice or red pepper!
