Apple and Fennel Soup

 Fall is here


Bring on the warm beverages and hot soups!

Fennel has a ton of health benefits, I wrote up a blog post HERE on them. If you choose a green apple to put in your soup, it has less sugar. When the weather starts cooling down I love making soups, I really should do them year round but there's something about cooler temps that puts me more in the mood for them. Kids love slurping soup from the spoon too so don't be afraid to introduce your little to them. 

Fennel and Apple Soup

Servings: 4


2 onions (chopped)

2 fennel bulbs (chopped) 
2 green apples (chopped)
1 quart chicken broth
2 tbsp coconut oil
2 tbsp dried thyme
2 tbsp pink Himalayan salt 

Optional: add cooked chicken breast to add more protein


Cook onions for 5 mins over medium heat with coconut oil. Add fennel and apples, cook 5-10 mins. Add chicken broth, thyme & pink salt. Cook 5-10 mins. Blend half soup in blender then combine back to soup.
