EASY WHOLE CHICKEN CROCK POT RECIPE

make for a flavorful, juicy chicken. Opt out on the lemons if you aren't a fan of them or cut the quantity in half.

EASY WHOLE CHICKEN CROCK POT RECIPE

INGREDIENTS

1 whole chicken preferably organic
1 tsp wild himalayan pink salt (use code:WILDCROSBI for discount)
1/2 tsp pepper
1/2 tsp tarragon
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
3 bay leaves
Avocado oil

INSTRUCTIONS

1. Create a foil ring that you will place at the bottom of the crock pot. Make sure it's small enough to prop your chicken up. Do not skip this part. This will ensure that your chicken won't stick to the bottom or steam itself in it's own juices while it's cooking. We want crispy chicken, not soggy. 

2. Coat your crock pot with avocado oil or coconut oil. 

3. Remove neck and giblets that are packed into the small mesh bag inside of the chicken.

4. Cut 1 1/2 lemons into quarter pieces and insert them into the chicken. This will give your chicken a delicious lemon flavor and also add to the juiciness of it.

5. Mix all of your spices together in a bowl. Rub your spice blend all over your chicken. Adding a generous amount to the top. Set your chicken, belly up, on top of your foil ring.Set your bay leaves on top of each leg and throw the other at the bottom of the crock pot.

6. Cook on HIGH for 3-4 hours or when the thermometer reader is at 165 or higher when inserted into the thickest part of the chicken. Take out and broil in the oven for 5 minutes or at desired crispy level. 

7. There's also the option of cooking on LOW for 8 hours but the first hour needs to be cooked on HIGH then you can set on LOW for the next 7 hours or when the thermometer reader is at 165 or higher when inserted into the thickest part of the chicken.

8. If you are storing this for later, pour all those good juices from the bottom of the crock pot from the chicken over your chicken. It's packed with a ton of health benefits and it will keep your chicken from drying out.
