Zucchini Chicken patties

Zucchini Chicken patties


1lb. ground chicken
1 1/2 cups of zucchini
1 tsp cumin
1/2 tsp garlic chopped
3 tbsp of cilantro
3 green onions
3 tbsp coconut oil

*Double the batch for a wonderful meal prep option!


Finely chop onions and cilantro. Grate your zucchini with a cheese grater.

In a bowl, mix all ingredients together. Turn pan onto a medium heat to pan fry your patties or if you've gotten the griddle  like I've said time and time again. Use that and heat should be at 350. I cooked mine in coconut oil. Use whatever [ healthy ] oil you like to pan fry with though. 

Cook each side for 4 minutes each and a third time for 3 minutes. 

That's it y'all - SO easy!

Toddler & baby approved - ketchup // avocado mayo optional.

Other ways to use the patties:

Pair with arugula or potatoes. 
Top with diced avocado or avocado mayo. 
Chop the patties up and toss into a salad.
