Taco Tuesday!

I made this Sunday night and it's delicious. Packed with all whole ingredients and amazing spices. I try to stick to soy free, gluten free, msg free, dairy free ingredients. You can find all of that in this recipe. Refreshing and light just in time for summer.

Beef Taco Salad with Homemade Cashew Dressing

Ingredients

2 lbs of ground beef
3 cloves of garlic
2 heads of romaine lettuce
1 onion 
Riega organic taco seasoning
1 Avocado
Jalepenos
Salt & Pepper

Recipe

Cook 3 cloves of garlic for 2-3 minutes. 
Add onions, cook for 2-3 mins. 
Add ground beef.  
Brown ground beef until there is no 
pink sprinkle desired amount of taco seasoning. 
Set aside.

The Sauce:

1 1/2 cups Raw Cashews, cover with water
1/3 cup Nutritional yeast
2 garlic cloves
1/2 tsp salt

Prep:

I used my Vitamix to make the sauce. 
Combine all ingredients into the blender and blend well. 
That's it! Super easy!

Make your salad:

Chop romaine lettuce or toss into a bowl if you bought some pre chopped.  
Sprinkle all your toppings!

The most simple dinner ever. 
I plan to do this with chicken as well.
